Agnalotti with mushrooms and sausage

Ingredients
1/4 cup olive oil
1 tablespoon minced garlic
200 g sliced mushrooms ,washed
400 grams pasta sauce
1 cup red wine
500 grams pork sausage, chopped
600 grams spinach and cheese agnalotti
1/2 teaspoon salt, adjust according to taste
freshly ground black pepper
1/2 cup grated parmesan cheese
1/2 cup mascarpone cheese
Method
Cook and drain pasta according to packet instructions and set aside
Fry mushrooms and garlic in oil, set aside, once cooked
Fry pork sausage in the remaining oil, till browned
Add the pasta sauce and wine and cook till sausage is done about 5 minutes
Add the pasta and mushrooms stir through and warm the pasta, season the sauce with salt and pepper according to taste
Sprinkle with the parmesan cheese and place dollops of mascarpone on top
Ready to serve
