Agnalotti with mushrooms and sausage


SERVING SIZE: 4-6

PREP TIME: 20 mins

COOK TIME: 40 mins

TOTAL TIME: 1 hr







Ingredients

  • 1/4 cup olive oil

  • 1 tablespoon minced garlic

  • 200 g sliced mushrooms ,washed

  • 400 grams pasta sauce

  • 1 cup red wine

  • 500 grams pork sausage, chopped

  • 600 grams spinach and cheese agnalotti

  • 1/2 teaspoon salt, adjust according to taste

  • freshly ground black pepper

  • 1/2 cup grated parmesan cheese

  • 1/2 cup mascarpone cheese

Method


Cook and drain pasta according to packet instructions and set aside

Fry mushrooms and garlic in oil, set aside, once cooked

Fry pork sausage in the remaining oil, till browned

Add the pasta sauce and wine and cook till sausage is done about 5 minutes

Add the pasta and mushrooms stir through and warm the pasta, season the sauce with salt and pepper according to taste

Sprinkle with the parmesan cheese and place dollops of mascarpone on top

Ready to serve
