Chicken livers with onion


SERVING SIZE: 4

PREP TIME: 20 mins

COOK TIME: 30 mins

TOTAL TIME: 50 minutes




Ingredients


  • 1/4 cup olive oil

  • 1 kg chicken livers

  • 1 large brown onion thinly sliced

  • 2 teaspoons minced garlic

  • 1 cup washed chopped fresh parsley

  • 1 tablespoon lemon juice

  • salt to taste

  • freshly ground pepper







Method


Firstly prepare the chicken livers , trim any white bits off and and wash away any blood clots under cold running water and set aside


Heat oil in a heavy based frypan and add the onion , gently frying it , constantly stirring it so it does not burn , this will take almost 10 mins. You want the onion to become a golden brown colour .Add the garlic and cook for about 30 seconds


Add the drained chicken livers gently stirring till they change colour, a light brown, this will take almost 10 minutes , once done add the parsley fry gently for about 2 minutes then season with salt and pepper tasting it till satisfied

Add the lemon juice , stir through .

Delicious served with salad and fresh bread
