Chinese Beef in Black Bean Sauce


SERVING SIZE: 4-6

PREP TIME: 20 mins

COOK TIME: 30

TOTAL TIME: 50 mins


Ingredients

1/4 cup cooking oil[add 1 tablespoon of oil with each addition of food to be cooked]

600 grams scotch fillet, sliced in thin strips

1 red capsicum, thinly sliced

2 tablespoons chopped ginger

2 tablespoons chopped garlic

1 brown onion, sliced

3 spring onions chopped

2 tablespoons salted black beans [from asian grocery store]

1 tablespoon rice wine


Beef Marinade

2 tablespoons cornflour

1 tablespoon oil

1 teaspoon sugar

2 teaspoons soy sauce

1 tablespoon sesame oil

1/2 teaspoon salt


Ingredients for gravy

1/2 cup water

1 teaspoon sugar

1 teaspoon oyster sauce

2 teaspoons soy sauce

1 teaspoon sesame oil

1/2 teaspoon salt



Method

In a bowl mix beef marinade ingredients and pour over the meat , stirring well , set aside for at least 30 minutes

Mix all the gravy ingredients in a bowl and set aside

Place a bit of oil in frypan, quickly fry up the beef strips , till cooked and set aside

Add more oil to the pan and add the onions and garlic and ginger , fry till onions softened

Now add remaining vegetables and fry till capsicum softens

Add the rice wine

Add the beef , warm through

Add the gravy to the mixture and stir through , once thickened ready to serve

Delicious with steamed rice
