Fish in a parcel
SERVING SIZE: 4
PREP TIME: 10 mins
COOK TIME: 50 mins
TOTAL TIME: 1 hr
Ingredients
1/4 cup oil
2 bay leaves
1 whole fish gutted and scaled approx 1.5 kg [I used rainbow trout]
1/2 leak finely sliced
1/2 cup white wine
1 teaspoon salt
1/2 lemon sliced thinly
freshly ground pepper
2 tablespoons chopped parsley
1/2 carrot finely sliced

1/2 a potato finely sliced

Method
Preheat oven on at 200 degrees Celsius

Place the carrot, potato, leak in a steamer and steam for about 10 mins till soft when pricked with a fork
Grease a large baking dish and place a large piece of foil in it,
Place the washed fish on the foil and in the fish cavity place the potato,carrot, leak, lemon slices ,in layers , then place the bay leaves and the parsley inside as well, pour the oil and wine over the vegetables and sprinkle generously with salt and pepper.
You can place tooth picks through the fish to try to secure the filling , but not really necessary
Wrap the foil over the fish firmly and place in the oven cook for about 50 mins checking if it is cooked .
Serve immediately with a salad and fresh bread . Enjoy!
