Indian Lamb Saagwala[Lamb and Spinach Curry]

Ingredients


  • 1/4 cup oil

  • 1 kg lamb meat diced

  • 2 brown onions finely chopped

  • 1 tablespoon cumin powder

  • 1 tablespoon coriander powder

  • 1 cinnamon stick

  • 1 tablespoon minced ginger

  • 2 tablespoons minced garlic

  • 1x 400 gram tinned chopped tomatoes

  • 1 teaspoon cardamon powder

  • 6 green cardamon pods ground

  • 1/2 to 1 teaspoon chilli powder [according to spiciness ]

  • juice of 1 lime

  • 2 tablespoons plain yoghurt

  • 280 grams fresh spinach leaves

  • 10 curry leaves dry or fresh

  • 1 teaspoon fennel seeds

  • 1 tablespoon garam masala

  • 1-2 teaspoons salt [according to taste]

  • 1 handful fresh coriander

  • 1 long green chilli sliced finely




Method

In a frypan place all the dry ground spices [except the cinnamon stick] and heat for 1 minute till fragrant , be careful not to burn, then set pan aside


Heat oil in a large solid frypan add onions and fry gently for about 10-15 mins till soft and lightly browned,

Add the garlic and ginger and fry for another 1 minute

Add the fried spices into the onion mix and fry for another minute

Place thus mixture into a blender adding with the tomatoes and blend till smooth

In a frypan add a bit more oil and fry the meat till lightly browned this will take about 20 mins

Place the lamb in a deep saucepan adding the blended mix and add the cinnamon stick and cook for 40 mins , till lamb is soft


Place the spinach, chopped chilli and coriander leaves in blender and blend the ingredients add the lime juice and salt , pour this into the cooked lamb, add the yoghurt and check the taste for any more salt,

Served with steamed rice and roti
