Mexican Baja Chicken


SERVING SIZE: 4-6

PREP TIME: 10 mins

COOK TIME: 30

TOTAL TIME: 40 mins


Ingredients

1/4 cup oil

4 spring onions finely sliced

8 chicken thigh cutlets

1 red chilli finely chopped

3 tablespoons Mexican spice powder

1/2 cup chicken stock

250 ml Philadelphia cream cheese

400g can black beans rinsed and drained

420g can corn kernels drained

salt and pepper to taste


Method

In a frypan add the cooking oil and fry the chicken pieces till browned both sides , remove and set aside

Place onion and chilli in the frypan and fry till softened about 2 minutes

Place the spice powder and stock and cook for 1 minute

Add the cream cheese and cook for 1 minute

Add the chicken pieces and corn and beans stir thoroughly , bring to the boil, reduce the heat cover and simmer for 20 minutes till chicken is cooked through , taste and season with salt and pepper , serve with rice or potatoes
