Salmon in red curry sauce


SERVING SIZE: 4

COOK TIME: 20 mins

TOTAL TIME: 30 mins









Ingredients


2 tablespoons olive oil

600 grams salmon cut in large chunks

1 red onion diced

2 tablespoons minced ginger

2/3rds of a cup red curry paste

1x400 g coconut cream

2 tomatoes cut into 1/8 ths

60 grams washed baby spinach leaves

1 tablespoon brown sugar

1 tablespoon fish sauce

steamed rice to serve with


Method

Place oil in a large saucepan add the salmon pieces and fry both sides till golden , but not cooked through, set aside

Add the onion and garlic and fry till golden brown

Add the curry paste and coconut cream and fry till warmed through only about 2 minutes

Add all the rest of the ingredients except the salmon , stir through till warmed

Add the salmon warm through for about one minute , ready to serve

Delicious with steamed rice .
